40g 'Baby rice' cereal
50g Mango Puree
2 Egg White
3 tsps Coconut Oil

A homemade version of the classic and ever-popular ‘puff’ snack.

Pre-heat the oven to 190°C (374°F).

Whisk the eggs until foamy, either by hand or in a mixer.

Whisk in the mango puree.

Very quickly whisk in the baby rice and coconut oil

Shape the mixture into finger length sticks and place on a lightly greased baking tray.

Bake for 12 minutes.

Using a spatula, slide the puffs off the tray and watch them wiggle into little puffy shapes!

Leave to cool completely before serving.
