Ingredients

250g Arborio Rice
700ml Low Salt Vegetable Stock
200g Fresh Tomatoes
1, small Courgette
1 Onion
2/3 bunch Basil
50g Italian Hard Cheese

Risotto is so versatile! Serve this delicate dish with fish or chicken or just on its own.

Done

Finely dice the onion and basil and dice the tomatoes and courgette.

Saute the onions in a little oil until transparent.

Add the tomatoes and courgette and cook for 5 minutes.

Add the risotto rice and mix into the vegetables.

Pour in the stock and add half of the basil.

Cook for around 20 minutes (more if you would like a softer texture), stirring frequently before removing from the heat.

Add the cheese, the rest of the basil and a sprinkle of black pepper.
