50g Basmati Rice
50g Minced Lamb Optional
1 tbsp Unsalted Butter
1/2 Carrot
1/4 Courgette
2 florets Broccoli
1/4 tsp Turmeric
2 tbsp Grated Cheddar
1/2 tsp Tomato Purée
A pinch Black Pepper
1/4 tsp Paprika
2 heaped tbsp Breadcrumbs
1 heaped tbsp Plain Flour
1 Egg

Heat butter or oil in a pan over medium heat. Add the lamb mince, turmeric, paprika, black pepper and fry for about 2 minutes.

Add vegetables and tomato puree and cook for about 4-5 minutes or until the meat and vegetables are fully cooked.

Cook the rice as per instructions on the packet.

Mix the rice with the meat and vegetables mixture and the cheese.

Roll into little spring roll shapes using your hands.

Put the flour on a plate/dish and beat the egg into a small bowl. Tip the breadcrumbs onto a flat plate.

Roll each roll into the flour then dip into the egg and finally coat with breadcrumbs.

Put enough oil into a large frying pan to give a depth of 1-2 cm and put over a medium heat.

When the oil is shimmering, add the rice balls and fry for 3-4 mins, turning frequently until golden brown.

Place the fried rolls and balls on a paper towel to drain the excess oil.
