80ml Whole milk

1/3 tsp Yeast Powder

50g Sour creamOr full fat Greek yogurt
Directions
A very cute lunch! Batch cook and freeze the blinis, ready to top however you wish.
Topping ideas include:
- Soft cheese and any soft fruit or veg
- Full fat Greek yogurt with slithers of cucumber, tomato or soft fruit
- Tomato purée and grated cheese
- Mashed avocado
- Hummus
- Mashed banana and peanut butter
- Squashed berries and almond butter
- Tinned fish mixed with crème fraîche

Sift the flour into a mixing bowl. |

Heat the milk in a saucepan. When it starts to bubble, take off the heat and add the yeast and the sour cream. |

Add the mixture to the flour and stir well. |

Cover and leave in a warm place for an hour. You should get a few little bubbles on top. |

When you are ready, heat a little oil in a pan and add teaspoons of the mixture at a time to form your pancakes. Cook for about a minute each side. |
