1 Egg
80ml Whole milk
1/3 tsp Yeast Powder
50g Sour cream Or full fat Greek yogurt

A very cute lunch! Batch cook and freeze the blinis, ready to top however you wish.

Topping ideas include:

  • Soft cheese and any soft fruit or veg
  • Full fat Greek yogurt with slithers of cucumber, tomato or soft fruit
  • Tomato purée and grated cheese
  • Mashed avocado
  • Hummus
  • Mashed banana and peanut butter
  • Squashed berries and almond butter
  • Tinned fish mixed with crème fraîche

Sift the flour into a mixing bowl.

Heat the milk in a saucepan. When it starts to bubble, take off the heat and add the yeast and the sour cream.

Quickly whisk in the egg.

Add the mixture to the flour and stir well.

Cover and leave in a warm place for an hour. You should get a few little bubbles on top.

When you are ready, heat a little oil in a pan and add teaspoons of the mixture at a time to form your pancakes. Cook for about a minute each side.

Leave to cool before topping.
