Ingredients

70g Plain Flour
40g Leftover Veg ...or steamed veg, eg carrots/broccoli/peas (in absence of leftovers you could use grated courgette or carrot that has been squeezed in kitchen roll first)
15g Mature Cheddar
120ml Whole milk
1 Egg
1/2 tsp Paprika
A squeeze Lemon

This is a great recipe for babies who are a little fussy with vegetables (though always offer vegetables in their original form too!).  Spread with soft cheese, guacamole or hummus.

Sift the flour into a mixing bowl. Whisk in an egg.

Slowly add the milk and whisk together.

Chop the veg as small as you can then add to the mixture along with the paprika, squeeze of lemon juice and the cheese.

Heat a tablespoon of oil in a large frying pan. Once hot, ladle in your pancake mix, topping to spread into a circle.

Cook for a minute on each side,flipping carefully with a spatula.

Remove from the heat and spread with your chosen topping.

You can either just cut up the crepes into bite sized pieces, roll up tightly and serve as a ‘roll’, or slice into little rounds.
