600g Joint of Lamb

1 Onion

2 large Potato

2-3 Carrot

1 1/2 tsps Lazy Garlic

1/2 tsp Mixed Spice

2 tsps Oregano

1 tsp Thyme

2 Bay Leaf

1/2 Lemon

4 tablespoons Tomato Purée

150ml Low Salt Chicken StockOr low salt lamb stock
Directions
This is my little girl’s absolute favourite dinner! Slow-cooking makes the meat so soft and so much easier to eat. We have family in Greece so eat a lot of Greek-inspired meals. I hope you enjoy this traditional lamb stew. We like it with pan fried green beans and aubergines.

Dice the onion. Slice the potatoes into thick-ish half moons and the carrots into batons. |

Place in the slow cooker and stir in the garlic and the tomato purée. |

Rub the herbs into the lamb and place on top of the vegetables in the slow cooker. |

Squeeze the lemon and pour the stock over. |

Cook for 6 hours on ‘low’. |

‘Pull’ apart for baby (like pulled pork) and serve with the super soft potatoes, carrots and a helping of your chosen side dish. |
