This is a really simple curry. Add cooked prawns, chicken or tofu for protein or serve as it is. Don’t worry about the sauce being too runny for baby- the vegetables will be beautifully soft for easy self feeding and the sauce can be spooned over rice or noodles.
My new favourite topping for jacket potatoes, even better with feta sprinkled on top! Let babies scoop the beans up with their hands or utensils. Recipe makes a large batch to serve 4, plus extra to keep or freeze.
