400g Cod Fillet Boneless
1, small Broccoli
200g Cherry Tomatoes
1-2 cloves Garlic
A large knob Butter Or olive oil
1/3 bunch Fresh Parsley
1/2 Lemon

This is an easy and tasty mid week meal. Just serve with your choice of potato, pasta or rice.

Pre-heat the oven to 190°C (374°F).

Finely dice the garlic. Halve the cherry tomatoes and chop the broccoli into florets.

Place the fish into a large baking dish/tray. Surround with the tomatoes and broccoli.

Sprinkle over the garlic and torn parsley and squeeze over the lemon.

Roughly chop the butter and scatter over the dish, or drizzle with olive oil.

Bake for 20 minutes, until the fish flakes.
