Ingredients

2 Cod Fillet
400g White Beans tinned
400g Chopped Tomatoes tinned
1 large Onion
1 Carrot
8-10 Cherry Tomatoes
1 clove Garlic
1 tsp Smoked Paprika
1/2 Lemon
A handful Fresh Basil
A handful Fresh Parsley
A handful Spinach
400g, approx Mashed Potato
50g, approx Grated Cheddar Optional

A budget friendly, veg packed version of a family classic.

Done

Dice the fish roughly and put to one side.

Finely dice the onion, garlic, carrot, tomatoes and herbs.

Sauté the onion until translucent then add the garlic and carrot. Cook until the carrot begins to soften.

Add the tinned tomatoes, cherry tomatoes and paprika. Bring to a simmer then add the beans and fish.

Cook on a low heat for 10-15 minutes until the fish is just cooked.

Add the herbs, spinach and lemon juice.

Top with the mash and a sprinkle of cheese and bake for about 20 mins, or until the cheese is golden.
