2 Cod Fillet

400g White Beanstinned

400g Chopped Tomatoestinned

1 large Onion

1 Carrot

8-10 Cherry Tomatoes

1 clove Garlic

1 tsp Smoked Paprika

1/2 Lemon

A handful Fresh Basil

A handful Fresh Parsley

A handful Spinach

400g, approx Mashed Potato

Dice the fish roughly and put to one side. |

Finely dice the onion, garlic, carrot, tomatoes and herbs. |

Sauté the onion until translucent then add the garlic and carrot. Cook until the carrot begins to soften. |

Add the tinned tomatoes, cherry tomatoes and paprika. Bring to a simmer then add the beans and fish. |

Cook on a low heat for 10-15 minutes until the fish is just cooked. |

Add the herbs, spinach and lemon juice. |

Top with the mash and a sprinkle of cheese and bake for about 20 mins, or until the cheese is golden. |
