Ingredients

1 large Onion
2 cloves Garlic
1 stick Celery
1 small Carrot
400g Chestnut Mushrooms
750ml Low Salt Vegetable Stock
1 tbsp Dried Parsley Or Tarragon
3 tbsp Crème Fraîche
A good pinch Black Pepper
A tiny pinch Nutmeg

This smooth, creamy soup is a delight on cold days.

Steps

Done

Dice the onion, carrot, celery and garlic. Chop the mushrooms roughly.

Heat a tablespoon of oil or butter in a large saucepan. Add the onions and cook until almost translucent.

Add the diced carrots, celery and garlic and a splash of water. Cook for 5 minutes on a fairly high heat.

Turn down the heat and pour in the vegetable stock.

Add the mushrooms and the herbs.

Simmer for around 20 minutes until all the veg are soft.

Turn off the heat and add the creme fraiche, the black pepper and the nutmeg.

Blend with a hand blender until smooth.
