50g Wholemeal Flour
100g Plain Flour
2, large Eggs
180ml Milk Any
A dash Maple Syrup Optional

These light and wholesome crêpes are delicious filled with yogurt and berries.

Steps

Mix the flours together before whisking in the rest of the ingredients until you have a smooth batter.

Leave the batter for around ten minutes.

Add a small amount of oil to a crêpe pan. Once hot, add a thin layer of the batter using a ladle. Coat the pan with the batter by swirling the pan.

After a minute (and no more), use a spatula to ease the crêpe upwards, then carefully flip to cook the underside for around half a minute.

Repeat steps 3 and 4 until you have used all of the mixture.
