This is a really simple curry. Add cooked prawns, chicken or tofu for protein or serve as it is. Don’t worry about the sauce being too runny for baby- the vegetables will be beautifully soft for easy self feeding and the sauce can be spooned over rice or noodles.
Great for rushed evenings and full of lovely fresh ingredients. The chilli itself is full of flavour but not spicy-hot, so add some extra chilli flakes to yours if you wish! I like to serve it with rice and avocado.
