120g Self-Raising Flour
100g Cherry Tomatoes
50g Unsalted Butter
50g Courgette
30g Grated Cheddar
3 Eggs medium
A handful Fresh Basil
1 tsp Garlic Puree
A pinch Black Pepper

Make up a big batch of these delicious savoury bakes and freeze the rest for later! If you don’t have a mini loaf tin, just use a muffin tin.

Pre-heat the oven to 200°C (392°F). Lightly grease the mini loaf tin.

Finely chop the tomatoes.

Whisk in the eggs and grate in the courgette.

Gently fold in all other ingredients.

Fill the mini loaf tin equally.

Bake for 18 minutes. Serve warm or cool.
