Ingredients

2, large Cod Fillet
1 Onion
10-12 Cherry Tomatoes
400g Plum Tomatoes
3 handfuls Spinach
2 handfuls Fresh corriander
1 tsp Cumin
1 tbsp Garam Masala
1/2 Lime
75ml Water

This is a great recipe for cooking in a hurry, especially when served with instant rice and some naan. If you have more time, try making my cauliflower pakoras as an accompaniment.

Dice the onion. Blitz the spinach and the coriander in a food processor or chop very finely.

Heat a tablespoon of oil in a large pan. Fry the onions until soft, then add the cherry tomatoes and spices and cook for a couple of minutes.

Add the plum tomatoes, chopped spinach and coriander, water and the juice of the lime. Bring to a simmer.

Add the fillets, whole, and cover with the sauce.

Put a lid on the pan, turn down the heat and leave to cook for ten minutes.

Check the fish is cooked (it should flake) before serving.
