100g, grated Carrot

60g Sultanas

100g Oats

1 Satsuma

40g Coconut Oil

1 tsp Cinnamon
Directions
These are as good as a slice of ‘proper’ carrot cake, but much healthier! Wrap up and take out with you as an alternative to cereal bars.

Preheat oven to 200°C (390°F). Line a small baking tray with baking paper. |

In a large mixing bowl, blot the grated carrot with Kitchen roll to remove excess water. |

Add the oats and the cinnamon and mix well. |

Roughly dice the sultanas into the same bowl. Squeeze over the satsuma (I throw in the flesh too) |

Add the coconut oil, raw, and continue to mix. |

Work the mixture into a large ball. It should stick together. |

Spoon the mixture onto the baking tray and flatten with the back of the spoon, like flapjack. |

Bake for 25-30 minutes, until totally set together and golden. Leave to cool completely before slicing into squares. |
