100g, grated Carrot
60g Sultanas
100g Oats
1 Satsuma
40g Coconut Oil
1 tsp Cinnamon

These are as good as a slice of ‘proper’ carrot cake, but much healthier! Wrap up and take out with you as an alternative to cereal bars.

Preheat oven to 200°C (390°F). Line a small baking tray with baking paper.

In a large mixing bowl, blot the grated carrot with Kitchen roll to remove excess water.

Add the oats and the cinnamon and mix well.

Roughly dice the sultanas into the same bowl. Squeeze over the satsuma (I throw in the flesh too)

Add the coconut oil, raw, and continue to mix.

Work the mixture into a large ball. It should stick together.

Spoon the mixture onto the baking tray and flatten with the back of the spoon, like flapjack.

Bake for 25-30 minutes, until totally set together and golden. Leave to cool completely before slicing into squares.
