150g Self-Raising Flour
4 tablespoons Coconut Oil runny
A pinch Mixed Spice
1 tbsp Maple Syrup optional

Super-fluffy muffins, suitable for vegans and babies with allergies. As always with baking, choose the ripest bananas you can find.

Preheat the oven to 190°C (374°F)

Mash the bananas

Sieve in the flour and add the other ingredients.

Combine into a thick batter.

Bake for around 20 minutes, until golden brown and crisp on top. Leave to cool completely.
