100-150g Cooked Salmon Older children and adults may enjoy smoked salmon
1 heaped tbsp Soft Cheese Or DF alternative
A splash Milk Cows or Oat
1/2 Courgette
1/2 tsp Dried Parsley

This recipe makes a hearty breakfast for the whole family. I use leftover salmon from the previous night’s dinner.

Whisk the eggs, milk and cream cheese together.

Grate in the courgette.

Tip into a pan and let it sit for a minute on a medium.

Stir gently, concentrating on the edges of the pan.

Turn right down and cook until almost set.

Flake in the cooked salmon and add the parsley and a pinch of black pepper. Gently stir through and serve.
