200g Rolled Oats
80g Coconut Oil
200ml White Grape Juice
1, large Lemon
50ml Milk Any

I love lemon, so I decided to make it the main feature of these soft textured flapjacks. They are lightly sweetened with grape juice, but you could add a drizzle of honey for over-ones (no honey before one).

Preheat the oven to 200°C (390°F).

Mix the coconut oil (cold) into the oats in a large mixing bowl.

Grate the zest of the lemon into the bowl and add two to three tablespoons of lemon juice.

Add the grape juice and milk and mix well.

Line a 30cm baking tray, or similar, with greaseproof paper. Spoon in the mixture and press down to make it level.

Bake for 25 mins until the top looks golden.

Once cool, remove from the tin onto kitchen paper, to blot any excess oil. Slice and enjoy!
